The Farmer's Market is home to many of the local growers and local bakers on the weekends who are in competition with the large chain grocery stores and the large produce companies who provide for the grocery stores. They set their items up to appeal to their customers and they always have plenty of stock available. Presentation is very, very important for each vendor to set their booth apart and draw their customers in. Onions are especially important to many chefs or customers who love to cook.
